Today my guest is long time friend and Master Cheese Crafter Paula Lambert, owner and BIG cheese of Mozzarella Cheese Company in Dallas Texas.
Paula Lambert fell in love with fresh mozzarella in Italy and decided to bring the art of cheese making home to Texas. Since 1982, her tiny downtown factory in Dallas has made award-winning cheeses the old- fashioned way – by hand. Using fresh milk and the finest Texas ingredients, Paula and her staff consistently produce cheeses that grace the pages of gourmet magazines and delight the taste buds of cheese lovers across the country.
Although the Mozzarella Company now produces almost 200,000 pounds of cheese a year and more than thirty different products, including a blue cheese, butter and a torta of mascarpone layered with pecan pralines, one thing still hasn’t changed: Each and every cheese is made completely by hand.

Bob is the mastermind behind Sunflower Shrimp. He was a crop farmer for 30 years, then decided that he wanted to bring the ocean to Kansas via shrimp farming. His hobbies include doing projects using complicated geometry and physics equations, going for drives with his three dogs, and wearing overalls at least every other day. Bob loves his family, he loves Oxford, KS, and he loves eating shrimp cooked on the grill!
Deb is married to Bob (they were middle school sweethearts) and she is the happiest, busiest person you will ever encounter. Her career is in pharmaceutical sales (and shrimp farming on the side, of course). Deb’s passions include being the rock for the Daniels family, growing her social network, smiling at everyone she meets, and watching Kansas sunrises and sunsets. This lady has never met a stranger and she’s been an avid shrimp lover since around the age of fourteen.
