Jun 27 – This Week’s Show

My guest this week is David Joachim talking about his newsletter and informative web site Digest This.
Digest This is a new weekly email newsletter featuring the most important food news from farm to fork culled from credible sources by Dave Joachim. He reads all the important food newsletters, newspapers, magazines, blogs, social media, and more, so you don’t have to. Joachim has been a respected food journalist and cookbook author for more than 25 years.

We are drowning in a sea of food information. It is difficult to find factual news that matters, such as accurate reporting on ground-breaking food technologies, how climate change affects our food supply, regulations that affect agriculture and food safety, and game-changing cooking techniques.
Digest This sifts through it all to give chefs, food processors, journalists, and home cooks the news they need to keep up with the changing food landscape. Digest This news summaries are linked from the newsletter to the website DigestThisNews.com and to the original news source if you want to do a deeper dive. Stories are categorized into sections: Chefs and Restaurants, Climate and Environment, Health and Nutrition, Regulations and Food Safety, Science and Technology, and New Book Releases, all in a clean design that facilitates quick reading.
David Joachim has authored, edited or collaborated on more than 45 cookbooks. He holds a master’s degree in English language and literature from Binghamton University, where he taught writing classes for three years. He is the author of the IACP Award-winning reference books, The Food Substitutions Bible and The Science of Good Food.  Joachim is currently the Editor of AmazingRibs.com, the internet’s largest barbecue website. He is former food editor of Vegetarian Gourmet magazine, and he has been co-writing the Food Science column for Fine Cooking magazine since 2011. His writing and tips have appeared in national publications such as USA Today, AARP, Better Homes & Gardens, Cooking Light, Cook’s Illustrated, Cooking Pleasures, Relish, Prevention, Fitness, Self, Men’s Health, Women’s Health, and Bicycling. As an author and spokesperson, Joachim has made numerous national media appearances on television and radio.
Joachim is also the co-founder of Chef Salt, a line of artisanal seasoning blends featuring unrefined sea salts and volcanic salts hand-harvested from around the globe.  Chef Salt is available in gourmet stores and grocery stores such as Whole Foods and at chefsalt.com.

Jun 6 – Joy Cone Company

My first guest this week is David George CEO of Joy Cone Company, first class ice cream cones.  Joy is the world’s largest ice cream cone manufacturer and has been mixing, baking and packaging ice cream cones at a sugar-scented factory in northern Arizona since 2000. Today, the Flagstaff facility produces up to 1.2 million cake, sugar and waffle cones daily.  Learn more at www.joycone.com

In 1918, Lebanese immigrant, Albert George, along with other family members, bought some second-hand cone-baking machines and started the George & Thomas Cone Company. Today, that company is still owned/operated by the George family along with the employees. As such, the company is now known as Joy Cone Company, after its signature brand of ice cream cones. It is the largest ice cream cone company in the world, baking over 1.5 billion cones/year.

We are an independent, 100% employee owned business, practicing the art of cone baking for 100 years.

Joy Cone Company also has a $20 million, 112,000 sq. ft. facility in Hermitage Pennsylvania, and the employees are excited. Why? Because they own the company.  Several years ago Joy Cone Company transitioned to an Employee Stock Option Plan. The company is now a 100% employee owned business.

“While there are a number of reasons for our success,” David says, “perhaps the most important has been our dedicated work force. Over the years, we have invested a lot of money in buildings, ovens, and equipment, but if you don’t have the right people in place, all of that does not matter.”  Joy Cone is on Facebook!

If you have great cones, you need something special to put in them
In the second half I’ll be talking to Kendra Burkey owner and quality ice cream maker at “Salted Creamery.”

From Salted Caramel to Cookies ‘n’ Cream, Berry Cheesecake to S’Mores, Salted Creamery is dedicated to creating the most vivid flavors you can find. Made in North Newton, Salted specializes in small batch ice cream and sorbets, sourcing many of their ingredients from local vendors and farmers.

May 30 – Perfectly Golden Pastries

My guest this week Angela Garbacz, owner of Goldenrod Pastries, with her new book Perfectly Golden – Adaptable Recipes for Sweet and Simple Treats.  Get a copy NOW

A cookbook of treats from the Great Plains to satisfy every sweet tooth.

Based in Lincoln, Nebraska, Goldenrod Pastries is a community bakery with an ambitious and talented baker at the helm. Angela Garbacz learned at her mother’s and grandmothers’ elbows, mixing up cookies and rolling sweet buns. Her training continued in New York City before she returned home and opened her dream shop.  www.goldenrodpastries.com

From her grandma’s famous peach coffee cake to caramel-covered pecan rolls, lemon meringue pie and frosted brownies to fluffernutter buns and confetti cookies, Garbacz’s pastries come out of the oven perfectly golden and regularly sell out. At her bakery, she creates delicious treats without dairy or gluten, but every recipe in this book can be made with butter and all-purpose flour just as easily as any alternative. With her positive attitude and confident voice, Garbacz makes it easy and fun to bake a perfect dessert that everyone can eat. This beautiful cookbook—the photography, the philosophy, and the desserts!—is an instant classic.
